Something with a deep tap root, like fennel, will work in a deep pot as it will be very efficient in getting all the water - it also handily droops very obviously when thirsty.  Mediterranean herb plants generally will give colours - soft yellowy greens mainly.
The other option is to get pot friendly varieties of dye plants - bedding tagetes, coreopsis and dahlia will all dye/print in the same way as their taller relations.]]></description>
